Dinner is Served!

Mexican Spring rolls...

At least that is what I shall call them. I sauteed some chicken breast with garlic, cilantro, fresh tomatoes and spices.  Wrapped in flour tortilla with some shredded Monterrey Jack cheese and fried until crispy.  Served them up with fresh green salad with chopped beets, refried beans and fresh jalapenos.

All that was missing was some avocado and sour cream, but that would have required a trip to the store on a lazy Sunday.  :)
