August 23, 2015 - Good-Bye Summer Vacation!

We have really enjoyed our last week of Summer Vacation.  Blake starts school tomorrow, and all the excitement that comes with that.

This past week was very smoky outside due to all the wild fires burning in the northwest, so other than some time in the garden and with the chickens, it was an "inside" sort of week.  Video games it was!

We started Super Mario 3D world on WiiU, and enjoyed a daily session of serious gaming.  Garrett joined us a couple of times, and it was grade-A hilarious!  Let me just say, the phrase of the week was..."Let me get the cat suit!"  More pronounced kad-zoooot.  lol  It was fun, and oh so funny.

My tomatoes are coming in nice and strong.  One night Blake asked me..."What is for dinner mom?" My response..."Tomatoes."  It is a good thing we love tomatoes!  This first year of serious gardening has gone very well for me.  Tomatoes and summer squash have been a smashing success.  Next year I want a huge variety of all my favorite stuff.  I am excited to plan my fall garden too.

My henny pennys are doing well.  Thelma seems to be just about healed from whatever her injury was.  She still has a slight limp, but is getting around much better.  We are still waiting on eggs though.  Garrett has decided that he has to be the one who discovers the first egg.  I think that would be awesome.  I had to laugh the other day because unbeknownst to him I had placed a fake egg in the nesting box so the girls would know where I want them to lay their eggs.  This fake egg looks and feels very real.  When Garrett discovered it, he got so excited!  lol

Today Casey and his girlfriend Brianna took Blake back-to-school shopping.  They bought him a nice Vans backpack. and a very cool hoodie.  "Thank you Casey!"  I have the best sons on the planet.  :)

My week in photos...

Day one...let the gaming commence!
 Smoky skies.
 Fluffy chicken butts...my favorite thing.

Enjoying an evening on my porch swing.
 Miss Thelma.
Smoky sunrise.  The foothills have vanished behind a veil of smoke.
 My beautiful tomatoes.

Blake enjoying some Supra time.

Last day of summer vacation.  We spent the evening in the garden picking dem 'maters.  :)
It is always exciting to go outside and see all these lovely red treasures, hanging in a sea of green leaves. I love gardening!

For dinner I baked some summer squash from the garden, made some macaroni and cheese, chipotle sausage, and added fresh tomatoes and cucumber also from the garden.  It was delicious!

May the new chapter commence!  We are ready.  :)

Until next time...enjoy life, and be kind to one another.

Peace.

August 16, 2015 - Last Week of Summer Vacation

Only one more full week until school starts for Blake.  I am both excited for him, and a bit sad for me.  I enjoy my long summer lazy days with my Blake.  <3

This past week was a great one.  Blake enjoyed his 14th birthday, and the weather was reasonably good.  Fire season is in full swing so the air quality has not been great.  I really hate fire season.

All is great in my world.  Even Thelma the chicken is feeling better.  She is getting around a lot easier, and that makes me so happy.  No eggs yet, but it should be any day now.

Best wishes for a relaxing and safe weekend ahead.

Some photos from my world this past week...

Now that Casey has moved out, Ducati has become my dog.  He is always watching me.

A lovely harvest from the garden.
My tomatoes have been perfect, and my yellow squash so delicious.

So hard to believe he is 14 years old already.  Such an awesome kid too.  :)
Loving his new hairstyle from Garrett's girlfriend, the most awesome, Genevieve.

 Miss Thelma.

Until next time...enjoy life, and be kind to one another.

Peace.

August 13, 2015 - Happy Birthday Blake!

August 13, 2001...now that was a cool day.

That is the day this then 40-year-old mother of four had the distinct pleasure of starting all over again in the "motherhood" department. The day I got to start enjoying that age old question that us moms get all the time..."Is he your first?" I chuckled every time..."Not exactly." My fifth child, how amazing is that?

And that is what you have been to us Blake, pretty freaking amazing. My gaming partner, my cycling partner, my movie-time partner, and some days...oh some days, my..."Oh my hell, take a chill pill kid!"...partner. Happy 14th Birthday son. I thank God every day for blessing me with the awesomeness that is you.

I love you so much. We all love you so much. Your dad, your brothers, and I pretty much think you hung the moon in our world. Thank you for making our lives more intersting and fun. May you have an epic, awesome, totally cool 14th year. You, my darling son, ROCK! And if you are lucky, maybe this will be the year that you finally beat your old mom at video gaming. (Dream on dude.)

Today as I went to take your annual picture, I had to stand up on my tippy toes to get the right angle. What the heck? You grew up. Time to add another picture to the collage-o-Blake.

Thank you to Garrett, and Garrett's amazing girlfriend Genevieve, for taking you out to dinner and to Gen's salon for an epic back-to-school makeover.  Not that you needed a make-over, but your new haircut is awesome!

Love you x infinity and beyond.

Until next time...enjoy life, and be kind to one another.

Peace.

August 7, 2015 - Happy Weekend!

Such a lovely week this has been.  The weather has been nice and cool, and life has been peaceful.

I truly love being retired.  Gardening, backyard chickens, photography, the dogs.  Wait, something is missing?  Oh yeah, cycling.  Oh cycling, where have you been?  I have not touched my bike since my last ride on July 4th.  What the heck?  Every weekend I tell Blake that I want to get up early and ride to the Farmer's Market, and every weekend we sleep in.  lol :)  I will get back on my bike...eventually.

In the meantime, some photos from my world this week...

New growth on my decapitated pepper plant!  I may be a green thumb after all.  :)
The lovely Rosie.
 Miss Thelma.
 Annabelle.

Dozer and his penguin.  He may be old, but he still loves his stuffed animals.  :)
 A beautiful Idaho sunrise.
I love my garden early in the morning.

Ducati is doing great with the chickens.

From garden to table.  I picked these delightful veggies for lunch and prepared some baked, breaded yellow squash.  Topped it with marinara sauce and Parmesan cheese.  And served with fresh tomatoes, green beans and peppers.  It was delicious!

My recipe for the squash...

Preheat oven to 450°.

Cut your squash into 1/4" slices, lay them out on the cutting board and sprinkle with salt.

Combine 1 egg,  1 tablespoon of milk in a shallow dish and set aside.

Combine 1/2 cup of Italian breadcrumbs, 1 tablespoon all-purpose flour, cracked pepper and any other spice you like in another shallow dish.

Dip squash slices into egg mixture,

then pat them into the bread crumbs (I really smash them into the bread crumbs)
and place on a baking sheet or foil that has been oiled with olive oil or vegetable oil.

Bake for 10 minutes, then turn over and bake for 5 minutes more or until brown and crispy.

For the marinara sauce, I simply sautée some garlic in olive oil, add some green onion, tomato sauce and salt and pepper to taste.  Add fresh sliced basil after it comes to a simmer.  (You can use any marinara recipe here.)

Plate your squash, pour marinara over the top and sprinkle with Parmesan cheese.

So much easier than deep frying.  :)

For your listening pleasure, some seriously cool tunage...
Have a great weekend!

Until next time...enjoy life, and be kind to one another.

Peace.
