Goodbye June!
I just remembered that today is the last day of June, so cya June! Thanks for the memories.

Dinner is Served...
A small delightful plate of "body fuel" for me.
The boys insisted on burritos for dinner, so mama went for something simple and healthy for me. I think I covered all the food groups?
A half of a whole wheat English muffin with a little cream cheese, 3 little baby sausages, two slices of Colby cheddar cheese, a large juicy strawberry, some blackberries, and sliced banana.
And a mondo hug from Blake.
Did wonders for my raging headache, and it looked pretty. It helps to excite the eyes, when the stomach is in no mood for food. :)
Will be getting my glucose monitor supplies tomorrow, and seeing my doctor on Tuesday.
The journey begins.

My 365...
I had an early morning visit from number one son this morning at 7:00am. He did not sleep well last night with his shoulder pain, and just needed to be around us I think. I made him lay down, and he is resting well now. His shoulder is not staying stable enough to heal. I feel so badly for him. If only there was a way to cast that area, but I know that is impossible.
My aunt is very old fashioned in her home remedies, and she suggested that I heat olive oil in a pan with Comino (Cumin) seeds. Once the mixture is nice and warm, use it in an ointment for a few days and he will be all healed! LOL, sounds tasty, but not so sure it will work on a torn AC ligament. At this point I am willing to try anything. She is 92 years old, and healthier than I am so she must know what she is doing! She learned everything from my grandmother who was a wonderful healer. Those "Old Ways" can sometimes be quite amazing. :)
I remember being very young and I had a high fever. My grandmother broke an egg on my stomach to cure me. Not sure it cured me...but it sure made a mess! They did believe in a lot of "Yerba Buenas" as they called them. There was a hot tea mixture for anything that ailed you in my grandmother's cupboard. What I find fascinating is that now "Yerba" is a very "in" and popular drink. I think my grandmother may have seriously been on to something?
Here is an old picture of "Mama Grande" with my mom and dad before they got married...
She was such an amazing woman. Did not speak a word of English, so we learned Spanish very young.
She was an amazing mother as well!
This weekend I have plans to go to the Farmer's Market with Amber so we can stock up on some fresh produce, and good healthy dinner fixings. Amber wants to cook some Cajun food for us this weekend. I will need to be sure it is Diabetes compatible. It will be fun shopping and cooking with her. Amber is an amazing chef, we are lucky to have her in the family!!
I also plan to shop for some good books on managing Diabetes. The most important thing about dealing with any disease is to be informed. So far on my list I have....

Blake and Cooper :)
Blake and I are enjoying an afternoon with grandson Cooper. He is so precious! Of course grandma went crazy with the camera. :)
Blake adores Cooper, and Cooper is pretty fond of uncle Blake. And Blake is doing an excellent job baby sitting!

My 365...
Good Afternoon World! :)
Can you say Hypoglycemia? I now know what that is, and let me tell you, it is not a good thing! I was struck with this frightening condition yesterday, and it is rather unsettling. Taking Diabetes medication without monitoring your blood sugar is not such a good thing, so it is back to sticking my finger several times a day. I am happy about it though because going into a coma does not sound so delightful. :P It is a little strange that my doctor did not have me monitoring my blood sugar. Hmmm...maybe it is time for a new doctor.
What I found to be so fascinating is that after I took my medication I knew something was not right with me at all. I experienced a sudden wave of "OMG I need to lay down I can not keep my eyes open", and I was seriously craving orange juice so much so that Jack had to go get me some. I am not even that particularly fond of OJ. After I drank about 16 ounces I felt better. Lesson here...your body knows what it needs, you only have to listen! I am pretty sure the problem is that my dose of meds is too high, so no more until I can check my levels more frequently.
I feel great today!
On a lighter note, it will be fun having a foodie blog with healthy Diabetic safe choices. I experienced gestational diabetes with my last three pregnancies, and I was on a very strict diet to manage my insulin. It was the healthiest I had ever been, so this is actually a good thing. See...there is a bright side to everything, you just have to open your eyes and look.
This blog has grown and changed into so many different things. It started out as a simple "365", that turned into my online journal branching off to "Cooking fun", "Life after 50", "Living with Rheumatoid Arthritis", "Empty Nest Syndrome" and now healthy eating to manage Diabetes. I think it is safe to say I am a happy mess! LOL Stay tuned!

My 365...
Do you ever wonder, what if.....?
No, I don't, that would be a ridiculous waste of time better spent living today
A...you made mistakes, get over it. Wondering "if" you should have done something differently is not going to change any of your outcomes. Not one bit.
B...trying to blame others for what you did or did not do...lame. That is so immature. If you can't "own" where you screwed up, you can't learn from your mistakes...because you don't think they were yours in the first place. Talk about your mondo waste of time!
C...Get over it! The past is the past. Everyone has moved on but you. People who moan and groan about what happened yesterday are looking for excuses not to live their best life today. That is what I see, and that is what everyone around you sees.
"I can't! No one showed me how! I never had good lessons....it is all their fault!" Really? When did your free will and brain power stop working. Pretty sure that kicked in at birth.
Don't let your life becomes a series of epic failures because all you concentrate on is what happened yesterday and blaming everyone else. As the great Dr. Phil would say..."How's it working for you?"
It is okay little turtle...life is good!

My 365...
What a busy Monday this has been! My phone has been ringing non stop with customer requests. Not that I am complaining, but give me a break people! Business is good. Thank GOD I get to work in PJ's and slippers. working from home is a magical thing. :)

We went outside for a little while this afternoon, but even Blake thought it was too hot. That is unusual.
It is very hot today, so no more outside for mama. I do not like hot. It looks like it will be cooling down later in the week.
At least the nights are cool after the sun sets. Even though the sun takes until 10:00pm to say goodnight.
Quick and easy lunch for the boys.
Flash steam some corn tortillas in the microwave, just until soft. Add some butter, left over chicken breast, fresh cilantro and shredded cheese. Roll and into the microwave just to heat through. Done.
Five minutes in the kitchen, boys fed and satisfied for at least 30 minutes....they eat non stop...and mommy can get back to work.
"Uhhh, don't look at me mama, I am just laying here minding my own business being a good Dozer."
Later we found Tonka's "Build a Bear" heart in the middle of the floor. At least Dozer did not eat that. :)
"JUST KIDDING!!!" You will be cursing me the rest of the day because you can't get this tune out of your head! :P
LOL, the boys showed this to me this weekend and the tune got stuck in my head...I did not want to feel alone in my insanity. So ridiculous!

Dinner is served!
As requested from my Garrett and Kori, "Mexico food." They are so silly. :)
Ingredients, Boneless chicken breast, fresh green onion, celantro, tomato, jalapeno, carrots, green pepper, garlic, rice, refried beans, salsa verde, sour cream, chicken bullion...salt, pepper, lemon pepper.
Total time in the kitchen...45 minutes to an hour.
Brown chicken breast in a cast iron skillet. Season with salt, pepper and lemon pepper.
Sautee the chicken until golden brown on the outside. It will not be cooked through...but that is okay it will steam later.
In a separate pot coated with veg oil, toss in 2 cups of white rice, salt and papper and lightly brown. Once brown, add chopped green onion, carrots and garlic.
Then you will add your browned chicken breast to the rice. Make sure to tuck up under the rice so it can get nice and steamed through during cooking. Add 3 1/2 cups of water, 1/2 cup of tomato sauce and a chicken bullion. Bring to a boil, add some green pepper and celantro, cover and steam.
While your "Arroz con Pollo" is cooking, slice up some fresh cucumber and tomato, and for my boys some green pepper too. Heat the refried beans. I prefer fresh, but canned will do in a pinch.
Dinner is served!
Top the refried beans with shredded cheese and jalapeno, top the chicken breast with tomatillo sauce, a dollop of sour cream on the cucumber and tomato, and some hot steamy corn tortillas. The tortillas just take a few seconds in the microwave to heat.

For desert, chocolate cookie dough ice cream. :)
And my reward for cooking a good meal...Garrett and Kori brought me this cute little stuffed mouse. :) Thanks you two. I <3 you!
