Hey mama...what's for Supper?
Rattlesnake Bites!
Tonight I tried my skill at some "Rattlesnake" bites, and they were quite yummy.
Recipe is as follows....
I added a few ingredients as follows...

Saute ground beef with garlic in a nice big honking cast iron skillet with salt, pepper and Cayenne pepper. I did not add cumin as I am not a fan of cumin.
Add some color. Green pepper, shredded carrots, jalapeño, green onion.
Cube some cream cheese....
...and stir it into the meat.
Since boys love explosions....call one over to open the Crescent Roll tubes. *Bam!*
Place on cookie sheet, bake in 375° oven for 15 minutes.
While the bites are in the oven, make some delicious dipping salsa. Saute some garlic and diced jalapeños in a sauce pan with butter. Yes, you read that right...mama loves butter!
Add a can of stewed tomatoes, a can of tomato sauce, and fresh cilantro. Salt and pepper to taste.
Dinner is served!

- Prep: 25 min. Bake: 15 min.
- Yield: 24 Servings
Ingredients
- 1 pound ground beef
- 1 can (4 ounces) chopped green chilies
- 1 package (8 ounces) cream cheese, cubed
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 3 tubes (8 ounces each) refrigerated crescent rolls
Directions
- In a large skillet, cook beef and chilies over medium heat until meat is no longer pink; drain. Add the cream cheese, cumin and chili powder. Cool slightly.
- Separate crescent dough into 24 triangles. Place 1 tablespoon of beef mixture along the short end of each triangle; carefully roll up.
- Place point side down 2 in. apart on ungreased baking sheets. Bake at 375° for 11-14 minutes or until golden brown. Serve warm. Yield: 2 dozen.
Nutritional Facts1 roll equals 175 calories, 11 g fat (4 g saturated fat), 20 mg cholesterol, 282 mg sodium, 12 g carbohydrate, trace fiber, 6 g protein.

Add the meat/cheese filling to the crescent roll dough, and roll them.
