Hey mama, what's for Supper?

Summer Salad.

It was SO hot today, high temperature 106° Fahrenheit, so the last thing I wanted to do was to spend an hour in a hot kitchen!  Solution, cooking up some chicken breast, and chop up whatever fruits and veggies on hand for a nice Summer Salad.

Add some oil to a hot skillet.

Add chicken breast, onion, green pepper and garlic, and cook through.  

Sprinkle with salt, pepper and lemon pepper.

In separate serving bowls I put the following...

Raw Spinach

Romaine Lettuce

Diced tomatoes

Diced cucumber

Grapefruit slices

Peach slices

Sliced Jalapeño

Sunflower Seeds

Fresh Croutons

...and any other fresh veggies or fruit you happen to have on hand.

Then stand back and let everyone create their own salad.

Top with your favorite salad dressing.  My favorite is Litehouse Honey Mustard

So easy, and healthy, and chicken tastes really delightful with fruit.  :)

To drink, a nice glass of freshly brewed Jasmine tea on ice.
